So I’ve decided to lose weight. After spending almost 7 months in Peru, and eating tons and tons of high-fat and/or fried foods, I’ve become more than a little chubby. Before I left last December I began reading about the amazing health and weight loss benefits of coconut oil. Apparently, this tropical oil is possibly one of the healthiest oils in the world - which is strange because I remember reading years ago that coconut oil is very, very bad for you! Back in the 90’s many health “experts” claimed that the large amount of coconut oil contained in packaged foods was at least partially responsible for the increase in heart disease in the US. Turns out this probably isn’t the case at all.
Anyway, I came across the book The Coconut Diet and began reading it just a few days ago. Very interesting stuff, to say the least! Yesterday I bought a small jar of the stuff at Vitamin Shoppe. Went home, got a spoon, and ate a little bit. Not bad at all. In fact, kind of tasty! Of course, I love all things that smell and/or taste like coconut so I may be a little biased.
So hopefully, if I can stick to the diet, the weight will be coming off within the next few weeks. I’ll keep you updated…
